Warning: Marijuana edibles take longer for an individual to feel the effects (up to 45 minutes to 3 hours), hit harder than smoking and last longer.  Be mindful of this when consuming edible marijuana foods.

The main active ingredient in marijuana is THC (tetra-hydro-cannibol). For best results, THC must first be extracted into a butter or oil mixture and then added or cooked with the food.

Ingredients:

1 lb. of unsalted butter
1 oz. of weed

Equipment:

Double boiler, cheese cloth, strainer, grinder.

 Procedure:

Grind the marijuana and set aside. Place water in the bottom of the double boiler and fill half way. Place the smaller pot on top of the larger pot and add the butter.  Heat on medium.  Once the butter has melted, add the marijuana and let simmer until the butter has turned a deep green color from the marijuana, about 30-40 minutes. Make sure the water in the bottom pot is at a simmer and the butter heats slowly so that the heat does not burn and destroy the THC. Once the butter has been infused, strain the butter through a sieve or cheese cloth. Discard all the pieces of weed. Pour into a container and chill until solid.

Weed butter can be used in cakes, muffins, brownies and any other recipe that contain butter. Weed butter is great in soups and noodle recipes and on bread and crackers.

Cannabis Oil

Cannabis oil can be made with any type of oil. Some oils like olive oil have strong flavor so depending on what you are cooking will depend on which type of oil to use. In general canola oil is a good choice. Choose your type of oil according to its recipe use.

6 cups of oil
1 oz. cannabis buds, finely ground. Double the amount to 2 oz. if using trimmed leaf, dried and ground..

Directions:
In a heavy saucepan on low heat, slowly heat the oil. When you start to smell the aroma of the oil add the cannabis in small amounts stirring to make sure it is coated with the oil. Once you have added all the cannabis simmer for about 45 minutes. Make sure your heat is on low.

Remove from heat to let cool. Strain cannabis in a metal mesh strainer pressing all the oil out . Reserve in an airtight container in the refrigerator.

Cannabis oil keeps well for up to 2 months but surely you’ll blow through this essential cooking oil way before that!

Weed Channel’s Infused Basil Pesto

This is by far the most versatile staple to have in the kitchen. It’s easy to make – provided you have a food processor.

Ingredients:

2 cups of fresh basil leaves – washed and patted dry. Remove stems.
3 cloves of garlic, skin on
1/4 cup of pine nuts
1/4 Parmesan cheese
1 cup of cannabis oil (have some extra on hand)
salt and pepper

In a small saucepan add 1/2 cup of water and bring to a boil. Add the garlic with the skins on and poach for only 2 minutes. This will remove the sharp taste of the garlic. (If you are a garlic lover and don’t mind this strong aftertaste then skip this step).
Remove garlic from boiling water. DO NOT OVER COOK. Garlic should easily pop out of the skin.
With the food processor running add the garlic, then add the pine nuts. Stop the machine and scrape the sides of the bowl with a rubber spatular. Now add the fresh basil leaves. Once all the leaves are chopped add Parmesan cheese. Stop machine and scrape the sides of the bowl.
With machine running slowly add cannabis oil. If the pesto seems dry add more oil. Add salt and pepper to taste.

Serve over your favorite cook pasta or simple serve with crusty Italian bread. This pesto is great on sandwiches, grilled vegetables, grilled meats and fish.

An American favorite – What can be better?

8 oz. (on stick) of unsalted butter
8 oz. of cannabis butter
4 oz. of unsweetened chocolate
4 eggs
2 cups granulated sugar
1/2 cup unbleached all-purpose flour
1 teaspoon vanilla extract

Preheat oven to 350ºF. Grease and flour a 9 x 12 inch baking pan.
Melt butter and chocolate in the top part of a double boiler over boiling water. When melted, set aside to cool to room temperature.
Meanwhile, beat eggs and sugar until thick and lemon-colored; add vanilla. Fold chocolate mixture into eggs and sugar. Mix thoroughly.
Sift flour and fold into batter.
Pour into prepared pan and bake 25 minutes or until center is just set. DO NOT OVERBAKE.
Allow brownies to cool in pan for 30 minutes before cutting into bars.

Quick Tomato Cannabis Sauce

Can you imagine loving your favorite pasta dish more than you already do?
Well, here’s how – make it with cannabis oil.

Ingredients:
2 cans of crushed tomatoes (RedPack)
one small onion, chopped
3 cloves garlic, chopped
1/4 cup cannabis oil
1 tsp. dried oregano
1/4 cup fresh parsley
salt and pepper to taste
1 lb. of fresh or packaged pasta.
1/4 cannabis butter, melted

Procedure:
Set a large pot of water on high heat for the pasta. While this is getting to a boil perpare the tomato sauce.
Heat oil in a large skillet. Add onions and saute on medium heat until translucent. Add garlic. Be careful not to burn. Add crushed tomatoes, oregano, salt and pepper. Bring to a boil. Lower and simmer for 30 minutes. This is a quick and delicious sauce thats great on any pasta.

For the pasta, add 1 tsp of salt to the boiling water and add your dried pasta. Cook for 12 minutes, drain well. Toss pasta with 1/4 cup of melted cannabis butter. Add sauce to pasta and garnish with fresh parsley.

*If using fresh pasta, boil only for about 5 minutes.
*If you do not have cannabis butter substitute with 1/4 cup of cannabis oil
